Coconut Curry Lentil Soup

Ingredients:

  • 1 cup dried green or brown lentils, rinsed and drained
  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • Salt and black pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped, for garnish

Instructions:

  1. In a large pot, heat coconut oil over medium heat. Add chopped onion and carrots. Sauté for about 5 minutes until vegetables start to soften.
  2. Add minced garlic, curry powder, ground turmeric, ground cumin, and red pepper flakes. Sauté for another minute until fragrant.
  3. Stir in the rinsed lentils, diced tomatoes (with their juices), coconut milk, and vegetable broth.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes or until the lentils are tender.
  5. Season the soup with salt and black pepper to taste.
  6. Just before serving, stir in the juice of one lime.
  7. Ladle the coconut curry lentil soup into bowls and garnish with chopped fresh cilantro.
