Homemade Granola Bars

Ingredients:

  • 2 cups rolled oats
  • 1 cup nuts (such as almonds, walnuts, or a mix), chopped
  • 1/2 cup honey or maple syrup
  • 1/4 cup nut butter (such as almond or peanut butter)
  • 1/2 cup dried fruits (such as raisins, cranberries, or apricots), chopped
  • 1/4 cup dark chocolate chips or chunks (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking dish with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a large mixing bowl, combine the rolled oats and chopped nuts.
  3. In a small saucepan over low heat, warm the honey or maple syrup and nut butter until well combined and runny. Stir in the vanilla extract, cinnamon, and a pinch of salt.
  4. Pour the wet mixture over the dry ingredients. Add the chopped dried fruits and dark chocolate chips (if using). Mix everything thoroughly until all ingredients are evenly coated.
  5. Transfer the mixture to the prepared baking dish. Use a spatula or your hands to press the mixture firmly and evenly into the dish.
  6. Bake in the preheated oven for about 15-20 minutes or until the edges turn golden brown.
  7. Remove from the oven and let the granola bars cool completely in the baking dish. This allows them to set.
  8. Once cooled, lift the parchment paper to remove the block of granola from the dish. Place it on a cutting board and use a sharp knife to cut into bars of your desired size.
  9. Store the homemade granola bars in an airtight container at room temperature or in the refrigerator for longer shelf life.
