Lemon Garlic Roasted Chicken

Ingredients:

For the Chicken:

  • 4 bone-in, skin-on chicken breasts
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 lemons, sliced

For the Lemon Garlic Marinade:

  • 1/4 cup olive oil
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).

  2. In a bowl, whisk together the ingredients for the lemon garlic marinade: olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and black pepper.

  3. Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is coated. Marinate for at least 30 minutes, or ideally up to 2 hours in the refrigerator.

  4. Remove the chicken from the marinade and let any excess drip off. Reserve the marinade for basting.

  5. Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat. Place the chicken breasts skin-side down and sear for about 3-4 minutes, or until the skin is golden brown and crispy. Flip the chicken breasts over.

  6. Place lemon slices in the skillet around the chicken.

  7. Brush the chicken with some of the reserved marinade.

  8. Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the juices run clear.

  9. While roasting, baste the chicken with the remaining marinade every 10 minutes for added flavor and moisture.

  10. Once done, remove the skillet from the oven and let the chicken rest for a few minutes before serving.
