Ingredients:
For the Chicken:
- 4 bone-in, skin-on chicken breasts
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 lemons, sliced
For the Lemon Garlic Marinade:
- 1/4 cup olive oil
- Juice of 2 lemons
- Zest of 1 lemon
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions:
-
Preheat the oven to 375°F (190°C).
-
In a bowl, whisk together the ingredients for the lemon garlic marinade: olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and black pepper.
-
Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is coated. Marinate for at least 30 minutes, or ideally up to 2 hours in the refrigerator.
-
Remove the chicken from the marinade and let any excess drip off. Reserve the marinade for basting.
-
Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat. Place the chicken breasts skin-side down and sear for about 3-4 minutes, or until the skin is golden brown and crispy. Flip the chicken breasts over.
-
Place lemon slices in the skillet around the chicken.
-
Brush the chicken with some of the reserved marinade.
-
Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the juices run clear.
-
While roasting, baste the chicken with the remaining marinade every 10 minutes for added flavor and moisture.
-
Once done, remove the skillet from the oven and let the chicken rest for a few minutes before serving.
-
Serve the Lemon Garlic Roasted Chicken with the roasted lemon slices on top. Pair it with your choice of sides like roasted vegetables, rice, or a fresh salad.
