Tandoori Chicken Skewers with Mint Yogurt Sauce

Ingredients:

For the Tandoori Chicken:

  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup plain Greek yogurt
  • 2 tablespoons tandoori spice mix
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Wooden skewers, soaked in water

For the Mint Yogurt Sauce:

  • 1 cup plain Greek yogurt
  • 1/4 cup fresh mint leaves, finely chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions:

  1. In a bowl, combine the Greek yogurt, tandoori spice mix, lemon juice, olive oil, minced garlic, ground cumin, ground coriander, ground turmeric, paprika, salt, and black pepper. Mix well to create the tandoori marinade.

  2. Add the bite-sized chicken pieces to the tandoori marinade, making sure each piece is coated. Cover the bowl and let the chicken marinate in the refrigerator for at least 2 hours, or ideally overnight.

  3. Preheat the grill to medium-high heat.

  4. Thread the marinated chicken pieces onto the soaked wooden skewers.

  5. Place the chicken skewers on the grill and cook for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks.

  6. While the chicken is grilling, prepare the mint yogurt sauce. In a bowl, combine the Greek yogurt, finely chopped mint leaves, chopped cilantro, lemon juice, and a pinch of salt. Mix well to create the sauce.
